In Case You Get Hungry Between Meals

Just in case you get hungry between meals here are four tasty snack recipes:

Quesadillas (using leftovers)

Ingredients:

  • Large tortillas or wraps
  • Leftover mince/fajita mix/chicken etc.
  • Cheese

Method:

  1. Heat a frying pan without oil and place a tortilla in
  2. After a few seconds flip the tortilla
  3. Spread your mince/fajita/or other leftover meat on one half of the tortilla and top with cheese
  4. Fold the tortilla over and press down lightly
  5. Cook for a few minutes and serve cut into quarters

Spicy rice

Ingredients:

  • Rice
  • Oil
  • Curry powder
  • Hot sauce
  • Frozen veg – diced carrot, beans, sweet corn, or peas work well

Method:

  1. Cook the rice according to packet instructions
  2. Drain and put back in the pan with a small amount of oil
  3. Fry the rice and mixed veg for a few minutes
  4. Add curry powder and hot sauce to taste
  5. Cook for a few more minutes and serve!

Note: you could also use cooked chicken, prawns, or other meat or fish to turn this into a tasty dinner.


Ham and cheese omelette

Ingredients:

  • Middlesex -MPU2 eggs
  • Cooked ham
  • Splash of milk
  • Grated cheese
  • Butter for frying

Method:

  1. Beat the eggs, milk, ham, salt and pepper together in a bowl
  2. Melt the butter in a frying pan
  3. When the butter starts to bubble pour in the omelette mix
  4. Cook until the underside is starting to brown
  5. Sprinkle the cheese on top, fold the omelette over and cook for a further few minutes

Note: you can swap the ham for any cooked meat, or if you want a veggie version, subsititute the ham with mushrooms or peas


Super cheesy nachos

Ingredients:

  • Cheese flavoured Doritos or other cheesy tortilla chips
  • Grated cheese – use cheddar or a mixture of cheeses
  • Leftover bolognaise mixture (optional)
  • Sour cream/salsa/guacamole to serve

Method:

  1. Put the tortilla chips in a microwavable bowl
  2. Add the cheese and bolognaise mix (if using)
  3. Microwave for 30-40 seconds on HIGH until the cheese has melted and the bolognaise mix is hot
  4. Serve with your choice of sour cream/salsa/guacamole/hot sauce/any other topping
