Easy, Cheap and Delicious Dinner Recipes
Here are four easy, cheap, and delicious dinner recipes to keep your stomach (and your bank balance) satisfied.
Easy cheesy pasta
Ingredients:
- Cream cheese
- Pasta
- Bacon
- Onion
- Tomato purée
- Oil
- Grated cheese
Method:
- Cook the pasta in a pan of boiling water
- Slice or dice the onion and bacon
- When the pasta is cooked drain it and leave it to one side
- In the same saucepan heat some oil and then add the onion and meat
- When the onion and bacon is cooked, turn the heat down add a big dollop of cream cheese and tomato purée
- Give it a good stir and then add the pasta back in until everything is coated in the cheesy sauce
- Serve with grated cheese
Salmon & broccoli pasta
Ingredients:
- Pasta
- Broccoli
- Salmon – trimmings are about 89p in most supermarkets
- Cream cheese
- Lemon
Method:
- Cook the pasta in a pan of boiling water
- Cut the broccoli into small pieces
- When the pasta is nearly cooked, add the broccoli to the pan for the final five minutes
- When the pasta and broccoli are cooked, drain, put back in the pan and add the salmon and cream cheese
- Cook on a low heat until the cheese sauce has coated everything
- Serve with a squeeze of lemon
Budget bean casserole
Ingredients:
- 1 can of mixed beans
- 1 can of chopped tomatoes
- Tomato purée
- Mixed herbs
- Stock cube (any flavour)
- 1 Onion
- Oil
Method:
Slice/dice the onion and soften with oil on a medium heat
- Add beans, tomatoes, stock cube, tomato purée, and herbs
- Simmer for roughly 20 minutes until all ingredients are soft
- Serve with crusty bread
Baked potato
Ingredients:
- Jacket potato
- Your choice of filling
Method:
- Stab potato all over with a fork and rub in oil and a bit of salt
- Cook potato on Gas Mark 4/180°C for 1 ½ - 2 hours. Alternatively you can microwave it for roughly 9 minutes, but it won’t be crispy
- Serve with your favourite filling – we like cheese and beans!
