The Perfect Way To Treat Yourself
Just because you’re a poor student doesn’t mean you shouldn’t have a treat, right? Here are four low cost but maximum satisfaction dessert recipes.
Fabulous fruit salad
Ingredients:
- Mixed fruit – you can use fresh, tinned, or thawed frozen fruit (kiwi, peaches, melon, and mixed berries work well)
- Ice cream – any flavour
Method:
- Dice or slice the fruit if you’re using fresh
- Add fruit to a bowl with ice cream
- Enjoy!
Microwave banana pudding
Ingredients:
- 2 ripe bananas - sliced
- 100g butter
- 100g self-raising flour
- 2 eggs
- 2 tablespoons milk
- 2 teaspoons cinnamon
- 100g light muscavado sugar
Method
- Grease a large dish with butter and melt the rest
- Add banana, milk, eggs, flour, sugar, and cinnamon to the dish and mix well
- Microwave on HIGH for 8 minutes
- Serve with ice cream or chocolate sauce
Chocolate fridge cake
Ingredients:
Half a packet of digestive biscuits
- 150g each of dark and milk chocolate
- 100g butter
- 150g golden syrup
Method:
- Line a 20cm shallow, square tin with cling film
- Put the biscuits in a freezer bag and bash them with a rolling pin
- Melt the chocolate and golden syrup over a pan of simmering water, stirring occasionally
- Remove from the heat and add the biscuit mix
- Stir the mixture and spoon into the tin using the back of the spoon to level the surface
- Leave to cool, then place in the fridge for 1-2 hours until the cake has set
- Turn out the cake, remove the cling film, and enjoy!
Peanut butter cookies
Ingredients:
- 125g butter
- 195g light muscavado sugar
- 1 egg
- 2 teaspoons vanilla extract
- 195g plain flour
- ½ teaspoon baking powder & bicarbonate of soda
- 1 jar peanut butter
Method:
- Preheat the oven to Gas Mark 3/170°C
- Cream the butter and sugar together
- Add the egg and vanilla. Mix well
- Sift the flour, baking powder and bicarb
- Add the peanut butter and stir well
- Spoon into balls on a greased baking tray
- Cook for 8-10 minutes – enjoy!
