Create Great Lunches With These Fantastic Recipes

Being on a budget doesn’t mean you have to have a boring lunch – you just have to be inventive. Here are four lunch recipes that are sure to get your taste buds tingling.

Cous cous salad

Ingredients:

  • Cous cous
  • Butter
  • 1 orange
  • Coriander
  • 1 or 2 spring onions
  • Wafer thin chicken – shredded

Method:

  1. Cook the cous cous according to packet instructions
  2. Add a knob of butter and leave to one side
  3. Peel, segment, and roughly chop an orange
  4. Finely chop the coriander and spring onions
  5. Shred the chicken
  6. Combine all ingredients together and enjoy!

Chunky winter soup with pasta

Ingredients:

  • Shop bought spinach and ricotta tortellini
  • Small jar of pesto
  • Frozen peas
  • 2 vegetable stock cubes dissolved in 2 pints of boiling water
  • Double handful of roughly chopped kale

Method:

  1. Bring the stock to the boil and add the peas
  2. Bring back to the boil and add the kale
  3. Cook for a further five minutes
  4. Add the tortellini and cook for a further five minutes
  5. Turn off the heat, stir through a few teaspoons of pesto, and enjoy!

Note: you could swap kale for spring greens and leave out the tortellini if you want a less filling option.


Goat’s cheese sandwich

Ingredients:

  • Goat’s cheese
  • White bread
  • Finely chopped red onion
  • Mixed herbs
  • Oil

Method:

  1. Lightly toast the bread on one side under a hot grill
  2. Cut the goat’s cheese into small cubes and mix with the red onion, mixed herbs, and oil
  3. Spread on the untoasted side of the bread and place back under the grill until the cheese has melted and the onions have softened

Chip butty

For those times when only chips will do!

Ingredients:

  • Oven chips
  • White bread
  • Your choice of sauces and condiments

Method:

  1. Cook the chips according to packet instructions adding salt, herbs, or spices such as paprika to the chips
  2. Thickly spread butter on good white bread
  3. Assemble your sandwich
  4. Serve with coleslaw, ketchup, mayonnaise, brown sauce, hot sauce, or any other type of sauce, condiment, or side dish
